Lasagna Ingredients

  • 12 sheets lasagna sheets regular or whole wheat
  • 2 tbsp olive oil for sautéing
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup carrots grated
  • 1 can crushed tomatoes 14 oz
  • 1 can butter beans drained and rinsed
  • 1 tsp Italian herbs basil, oregano, thyme
  • 2 cups spinach fresh, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated
  • salt & pepper to taste

Instructions
 

  • Heat olive oil in a pan and sauté onion, garlic, and carrots until soft.
  • Add crushed tomatoes, butter beans, and Italian herbs. Simmer for 10 minutes.
  • Stir in spinach until wilted, then season with salt and pepper.
  • In a bowl, mix ricotta cheese with a pinch of salt, pepper, and parmesan.
  • Spread a thin layer of sauce in a baking dish.
  • Add a layer of lasagna sheets, followed by more sauce and ricotta mixture. Repeat layers and finish with sauce and mozzarella.
  • Cover with foil and bake at 375°F (190°C) for 30 minutes.
  • Remove foil and bake for another 10-15 minutes until golden and bubbly.
  • Let the lasagna sit for 10 minutes before slicing. Serve warm and enjoy!

Notes

For extra creaminess, mash some of the butter beans before adding them to the sauce. Adjust seasoning to your preference and experiment with additional vegetables like zucchini or mushrooms.
