Basic Ingredients

  • 2 large Russet or Yukon Gold potatoes thinly sliced
  • 4 cups cold water for soaking
  • 2 cups vegetable oil for frying
  • 1 tsp sea salt to taste

Optional Flavor Additions

  • 1/2 tsp garlic powder optional
  • 1/2 tsp onion powder optional
  • 1/2 tsp paprika for a smoky touch
  • 1/4 tsp cayenne pepper for a spicy kick

Instructions
 

  • Wash the potatoes and peel if desired.
  • Slice the potatoes thinly using a mandoline slicer or sharp knife.
  • Soak the potato slices in cold water for at least 30 minutes to remove excess starch.
  • Drain the potatoes and pat them completely dry using paper towels.
  • Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  • Fry the potato slices in small batches for 3-4 minutes until golden brown and crispy.
  • Remove with a slotted spoon and drain on a paper towel-lined baking sheet.
  • Season with salt and optional seasonings while still hot.
  • Let chips cool completely before serving or storing in an airtight container.

Notes

For healthier chips, bake at 400°F (200°C) for 20-25 minutes, flipping halfway. You can also use an air fryer at 375°F (190°C) for 10-12 minutes.
